How to Love Green Stuff........................................................... Arugula & Roasted Sweet Potatoes with Maple Dijon Vinaigrette

Green Stuff for you. 
This salad is seriously like candy.

You might want to immediately gather together your
ARUGULA, SWEET POTATOES, SWEET ONION, MAPLE SYRUP, DIJON MUSTARD, OLIVE OIL, AND RICE VINEGAR.....

because you're probably going to need to eat this now. 
For breakfast.
(it has maple syrup in it. duh.) 


3 EASY STEPS:

~ Slice sweet potatoes and onion. Roast in 425 degree oven with a little olive oil, salt, & pepper for 30 minutes. 

~ In small bowl mix together 3 T whole grain dijon, 2 T real maple syrup, 2 T rice vinegar, 1 T olive oil. 

~ Place HEAPING pile of arugula on plate. Top with potatoes and onions. Drizzle with some vinaigrette.

If you've never had arugula before, it kind of has a peppery bite to it which makes it a perfect complement to the sweet maple syrup dressing. You're gonna love this.
