3 Ingredient Mediterranean Feast

Chicken with Lemon & Olive ,  Pasta with Basil & Goat Cheese,  and Arugula Salad with White Beans and Pesto
Entertaining, although I love it dearly, always seems to be a labor intensive undertaking. However, due to my recent infatuation with 3 ingredient cooking I had the fam over last night and made a complete 3 dish Mediterranean inspired meal for 6, with only 9 ingredients! It was Glorious. I also made a 3 ingredient Nectarine Galette for dessert, which i will be sharing later. So, be sure not to miss that.

So... here are my 9 foodstuffs:
(and remember olive oil, butter, and S&P don't count in this 3 ingredient game)




For the Chicken with Lemons & Olives...

Season bone in- skin on chicken pieces (about 3 lbs) with S&P. Brown in a skillet drizzled with olive oil over med-high heat (5-8 minutes per side). I had to brown my chicken in 2 batches. Maybe you have a bigger skillet? :)  Transfer chicken to a baking dish and put in 400 degree oven to finish cooking (15-20min)

While the chicken is baking slice up a lemon or 2 and saute slices in the chicken skillet. Just for a few minutes until brown. Toss in your olives and heat through. Pour the lemon/olive mixture over the chicken for the last 5-10 minutes of bake time. 

Here's what it looks like post oven...  I'm not much of a meat eater, so I did not have any. But I heard it was good!

For the Pasta with Goat Cheese and Basil...



 Finely chop one bunch of Basil and stir into 1/2 Cup olive oil. Do this first and let sit for 30 minutes to an hour so the oil gets all infused with Basil flavor. Right before serving the meal, toss 1 package cooked pasta with 3-4 oz of Goat cheese and the basil/oil mixture. Season with S&P.


 For the Arugula Salad with White Beans & Pesto...

Toss together 4 Cups of Arugula, 1 can of drained and rinsed cannellini beans, and 1/3 C pesto
Season with S&P. 

And there you have it... It's almost too easy.
